What you need is:
pint of Lime Sherbet
pint of Pineapple Sherbet
pint or 2 depending on how big you make it of Raspberry Sherbet
bag of mini chocolate chips
a bowl
freezer space
about a day of time
The idea is to make a watermelon out of the sherbet. The trick to this is patience.
First pick out a bowl or your choice. In the past we used the silver mixing bowls but we didn't have one this year so I went with a tupperware bowl. You don't want the sherbet to be so hard you can't work with it so before you work with each layer pull out the sherbet for a little while so it will soft. The key is to work quickly and then return the bowl to the freezer. You start with the Lime which is your watermelon peel. I recommend doing the lime it two stages. You are lining the bowl with the lime and it tends to start to slide down. First do a layer of lime at the bottom of the bowl. Stick in back into the freezer for about an hour so it will have a solid base. Pull it back out and do the sides of the bowl. Maybe an inch thick. Place this back in the freezer for at least an hour. You are done with the lime sherbet and this is about the time I finish the container while I wait. It's a good idea to cover the bowl. This one happens to have a lid but foil works just fine.
Next layer is the pineapple. You don't have to do this layer in two parts because the lime will keep the pineapple from sliding. This layer you want to make thinner than the lime.
A spoon and your finger is your best friend for this. Stand by with warm water to keep your finger from freezing off. Once you have this layer done put it make in the freezer...you know the drill.
After about an hour the easiest layer is next. The raspberry with chocolate chips. Rasberry is the actual watermelon and the chocolate chips are the seeds. Soften the raspberry like the others and mix in the chocolate chips.
Then just fill in the rest of the bowl.
Make sure that the edges are all even and smooth them out.
Stick the sucker back in the freezer for at least another hour but it depends on how cold your freezer is. You can always wait until you are actually going to eat it before you pull it out.
When it is time pull it out and you are going to flip it out on a plate. I actually found that the tubberware was easier then the silver bowl because it have some movement. What I do is run the outside of the bowl under hot water to get the bowl hot enough that it will just let it fall out when flipped. Don't do it too long or you will really start melting it.
A few love taps later and...
Garnish with a few chocolate chips...
You cut it just like a piece of cake but you will most likely need to run the knife under warm water to actually cut it. Remember put it back in the freezer and this sucker will last for a while just as long as you keep it from getting freezer burn.

That's awesome! I would leave out the chocolate chips though, personal preference, you understand :)
